The field in question straddles a road running directly from the famed wine-producing region of Toriibira. Perched on the banks of the Hikawa River and with a refreshing breeze blowing through, the field is named “Natsuyake”, for even in summer does it feel like autumn!
To bring out the full deliciousness of these properly ripened light-purple grapes, we must proceed with fermentation carefully.
So, watch this space as we devotedly ferment our grapes harvested from this single field and produce our hiyori Katsunuma Natsuyake Koshu 2021!
