『hiyori 勝沼 夏秋（なつやけ）甲州 2021（白ワイン）』用の甲州ぶどうを収穫しました
秋空が晴れ渡る、まさに収穫日和に、しっかりと成長した甲州ぶどうを収穫しました。こちらの畑は、銘醸地である鳥居平地区から一本道路を挟んだ場所です。夏でも秋のように涼しいということから夏秋（なつやけ）と呼ばれる、風が気持ちよく抜ける日川沿いの畑です。薄紫色に熟した甲州ぶどうの美味しさを引き立てるべく、丁寧に発酵工程を進めてまいります。夏秋の単一畑から真心込めて醸造させた、『hiyori 勝沼 夏秋（なつやけ）甲州 2021』をどうぞご期待ください。
In fine harvest conditions, under a clear blue autumn sky did we harvest our well-grown Koshu grapes.
The field in question straddles a road running directly from the famed wine-producing region of Toriibira. Perched on the banks of the Hikawa River and with a refreshing breeze blowing through, the field is named “Natsuyake”, for even in summer does it feel like autumn!
To bring out the full deliciousness of these properly ripened light-purple grapes, we must proceed with fermentation carefully.
So, watch this space as we devotedly ferment our grapes harvested from this single field and produce our hiyori Katsunuma Natsuyake Koshu 2021!
