July 18th 2022 saw Yamanashi’s Kyoto district (comprising the cities of Yamanashi, Fuefuki and Koshu) selected for Globally Important Agricultural Heritage System status by the UN Food and Agriculture Organization (FAO) for its “fruit farming system adapted to the Kyoto Alluvial Fan”. The Kyoto area is deemed the birthplace of Japanese viticulture, with reports of a Koshu variant of grape dating back to the Heian Period (794-1185). The highly original system, conceived around 400 years ago, has seen sparse planting, large tree pruning and the use of so-called Koshu stakes to adapt fruit farming to the slopes of the Alluvial Fan and Japan’s rainy climate.
We, at Hiyori Winery, seek to preserve the historical Kyoto district fruit farming system we have fortunately inherited.

Idojiri district
This area lies at the heart of the Alluvial Fan fostering the Katsunuma fruit kingdom. Blessed with table grape vineyards and peach orchards releasing sweet aromas in fruit-picking season, the district also yields aromatic wine grapes.

Osade district
This area lies on the eastern tip of the Kofu Valley, some 450-550m above sea level. As sunlight hours are plenty and day-night temperature gaps vast, the soil is highly mineral-rich. “Katsunuma’s Highest-Altitude Terroir” is one of Japan’s foremost grape-growing areas.

Hishidaira district
This famous brewing area, some 450m above sea level, boasts mineral-rich clay soil filled with gravel. The gentle slopes enjoy good ventilation and abundant sunrays, and host vineyards pleasing on the eye.
“The Breezy Terroir “
Natsuyake District
This area derives its name from its summer season (natsu) coolness, which is reminiscent of autumn (yake) coolness. Among the several favorable conditions for grape cultivation are the sizable day-night temperature changes stemming from the “Sasago fall wind” blowing in from the eastern valley of Sasago Ridge, and good drainage.
